I really love the taste of guacamole but I’m always looking for other ways to use it. There are only just so many times that you can use it for chips and salsa, right? (Don’t get me wrong, I’ll still eat that every time, too!)
What I love about this is that it’s literally a simple way to use up chicken breasts and avocados. These chicken guacamole pinwheels are a great lunch when you’re just needing something fast.
I debated on if my son would like these or not but after just one bite of this Guacamole Chicken, he not only finished his but then even asked for mine, too!
Now that I know this recipe is certain to be a hit, I can forsee many summer lunches and quick dinners with this on the menu.

You can certainly customize these in any way you’d like. If you’re all about the spice, add some in. You’re going to love the fact that you can literally alter the taste of this recipe by adding in some more chili pepper or red pepper flakes.

- 1 chicken breast, large in sized and filleted into two
- 2 Roma tomatoes, diced
- 3 large avocados
- 1 cup of diced red onion
- 1/3 cup of cilantro, chopped up
- 2 limes
- 1 teaspoon of pepper
- 1 teaspoon of salt
- add 1 teaspoon of chili powder
- add 1 teaspoon of cayenne pepper
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- add 1 Tablespoon of olive oil or coconut oil
- Tortilla wraps
- Sour cream
- Any variety of shredded cheese
How to make this Chicken Tortilla Pinwheels recipe
Start by grilling your chicken breast on a cast-iron skillet. You’ll want to cook it on medium heat and add your cayenne pepper, paprika, cumin, chili powder, and lime to the top.

While the chicken is cooking, take your avocados and cut them open. Place the insides in a large bowl and add in the chopped onion, and diced tomatoes. Next, grab a lime, cut it in half, squeeze over the mixture and stir. Then, add in your salt and pepper.

Next, make certain that the chicken is thoroughly cooked and cut it up. Grab your tortilla wrap and line it with the sour cream and top it with shredded cheese of your choice.

Take your chopped chicken and add it into your bowl with the other mixture and stir.
Once it’s all mixed together well, take your mixture and place onto your wrap. Roll up tightly and slice into sections to enjoy.
