Homemade chicken noodle soup is one of those classic dishes I can’t help but have fond memories of. From helping mom chop the veggies to standing on a chair in the kitchen to reach over the tall soup pot! 

There’s a certain comfort in a homemade soup, especially when it’s made by mom. Whether it was a sore throat or a bully at school, her chicken noodle soup always made it better!

Homemade Chicken Noodle Soup

While it may seem easier to pop open a can of soup when you’re hungry, making it from scratch is completely well-worth it. It can be as time consuming or quick as you’d like, also!

For instance, if you don’t want to spend hours letting your soup cook, use pre-cooked chicken, such as rotisserie or even canned chicken.

If you don’t mind taking the extra time, using fresh chicken is a delicious choice in this dish!

What Goes Well with Chicken Noodle Soup?

One of my family’s favorite ways to enjoy this chicken noodle soup recipe is by adding crab cakes with it!

Crab cakes can be a bit time consuming to make, so there is no problem with using store-bought for this dish! If you do prefer to make your own, check out this recipe

How do you add flavor to Chicken Soup?

The longer you let your soup simmer the better all of the flavors will be able to meld together. The rich flavors of the spices mixed with the fresh vegetables will be breathing life into a rich and flavorful broth.

Tips for Making This Soup

  • If using rotisserie chicken, make sure to remove the skin and chop carefully. It’s important to make sure no bone fragments end up in your soup!
  • Use store bought crab cakes and fry them in oil yourself for freshness while still saving time!

Chicken Noodle Soup Ingredients

  • 2 ½ -3 lbs chicken, boneless/skinless breast, chopped – Use fresh or precooked chicken.
  • 8 garlic cloves – freshly diced works well but you can also buy pre-minced in a jar near the spices in most stores.
  • 5 premium crab cakes – as mentioned, I like to use store bought but here is a great recipe to make your own.
  • 3 cups medium egg noodles – Technically, you can use any pasta you prefer in your soup. Sometimes I switch up the type of noodles to keep it fun!
  • 2 cups chicken stock – stock is used to provide body, rather than just flavor, like broth is.
  • 1 onion, chopped – Yellow works but I prefer red onions best!
  • 3 green onions, sliced
  • 1 cup carrots, shredded – Thanks to the convenience of modern days, you can buy pre-shredded carrots if you want to save even more time!
  • 2 celery sticks, chopped – You can chop, or dice, or really cut these any size you want. I absolutely love the crunch that celery adds to the soup!
  • 2 tbsp amenos or soy sauce
  • 2 tbsp olive oil
  • ½ tbsp dried cilantro ( more or less to taste )
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ tsp allspice
  • ¼ tsp chili powder

How to Make Chicken Noodle Soup

1. Dice 4 garlic cloves and place in soup pot along with chopped chicken, celery, carrots, onion, cilantro, allspice, chili powder, salt, and pepper.

2. Add chicken stock and bring to a boil. Reduce to simmer until chicken is cooked thoroughly. You can measure this with a meat thermometer to be certain.

This step is only if you’re using fresh chicken, of course. If your chicken is pre-cooked, just simmer long enough to let the veggies bleed out their juices into a broth.

3. When soup is cooked. Fry 4 more garlic cloves in olive oil, sliced thinly until light golden brown. Set aside.

If you or your family aren’t big fans of garlic, this isn’t a make it or break it step. You can totally skip the added garlic, if preferred.

4. Prepare crab cakes by cutting into smaller portions and rolling into golf ball size. You can, of course, go bigger or smaller on these depending on your preference.

5. Heat in olive oil until golden brown on all sides and cooked thoroughly. If you like more of a crust on them, cook a bit longer until there is a nice medium brown color to them. Turn off heat but leave in pan to keep warm.

6. Boil egg noodles according to package directions. Or, if you are truly ambitious, you can make your own noodles from scratch!

Growing up, my mom often made fresh pasta from scratch. While I am certainly not against the idea, this is very time consuming to do!

7. Ladle soup into bowls, top with noodles, scallions, fried sliced garlic, crab cakes (2-4), and herb sprigs.
