It just makes sense that the world needs Keto Girl Scout Cookies. We all know that these cookies are life so those who eat Keto totally shouldn’t have to be deprived from them.
And guess what? Now you won’t have to be, ever again. These Keto tagalongs give you the power to make them up, anytime that you want them.
And honestly, this is totally unlike regular Girl Scout Cookies because they’re only available like one time per year..(unless you buy a bunch and freeze them)

Is peanut butter Keto?
It better be because it’s part of this recipe! But in all seriousness, peanut butter is considered a low carb food.
How do you store these peanut butter cookies once cooked?
Make certain that you store them in an airtight container to keep them as fresh as possible. Also, storing them in the fridge can help give them a little bit more life.
And personally, I really like the taste of these cookies when they’re cold! They have a “crunch” to them that I love.
What does the cookie actually taste like?
If you’re ever had a Tagalong Girl Scout Cookie, the taste is going to be just like that. Except this time around, it’s guilt-free for your Keto lifestyle.
The cookie portion will taste a bit like a shortbread cookie and the dark chocolate on the outer coating will give it a nice, sweet taste that combines perfectly with the rest of the cookie.

How to make Keto Cookies with Peanut Butter
Just gather up the list of ingredients below to get started.
Ingredients needed to make Keto Tagalongs:
Shortbread Cookies:
- 2 cups Almond Flour
- 1/3 cup Stevia in the Raw or Swerve Sweetener (I used Stevia in the Raw)
- ½ tsp salt
- 1 tsp baking powder
- 1 large egg
- 2 Tbsp. melted butter
- 1 tsp vanilla extract
Peanut Butter Topping:
- 1 cup Peanut Butter (Creamy is best)
- ¼ cup Swerve confectioners sugar
- 2 Tbsp. melted butter
Chocolate Cookie Coating
- 8 oz sugar free dark chocolate
- 1 Tbsp coconut oil
How to make Keto Girl Scout Cookies
Do to the layers in these Keto Cookies, there are steps broken down below for each cookie section.
How to make Shortbread Cookies:
To begin, take your parchment paper and line your cookie sheets. Preheat oven to 300F degrees.
Grab a large mixing bowl and mix them together of the flour, salt, and baking powder. Next, add in melted butter, vanilla extract and egg until mixture is combined.
Next, grab your parchment paper and on one piece of parchment paper take and roll out the dough between 2 pieces of parchment paper to about ¼ inch thickness. Once you have that done, go ahead and cut the cookies into circles using a 2-inch cookie cutter. You can also use the top of a champagne glass as well.
Then, you’ll want to gently lift the cookies up with a spatula and transfer to baking sheets. You should get about 36 cookies.
The baking time will be between 25-35 minutes or until edges are browning around edges. Let cool completely.
Peanut Butter Filling
Use a small bowl and melt the butter and peanut butter together until melted and smooth. Add in confectioners sugar until fully combined.
Spread about 1 teaspoon of peanut butter on the top of each shortbread cookie. Once done, freeze the cookies until

Add the chocolate chips and coconut oil to a small bowl. Place in the microwave and heat in 30-second increments until fully smooth.
Once done, grab a cookie one at a time and dip it into the melted chocolate. Using a fork to take advantage of the slips, lift up the cookie and tap fork against the side of the bowl to remove excess chocolate. It should just fall off easily. Once done, transfer the cookies to a lined cookie sheet.
