Once you bake them, you need to make certain that you store them and keep them in the fridge. This will keep them as fresh as possible and keep that crust nice and crispy as well.

How to make these delicious Keto Samoas

Gather up the ingredients below. The sooner you get started, the sooner you’ll be eating them!

Almond Flour Crust 

  • 1 1/4 cups almond flour 
  • 1/4 cup Stevia Sweetener
  • 1/4 tsp salt
  • 1/4 cup butter, melted

Chocolate Filling and Drizzle:

  • 4 ounces sugar-free chocolate chips
  • 2 tbsp coconut oil or butter

Coconut Caramel Filling:

  • 1 1/2 cups shredded coconut 
  • 3 tbsp butter
  • 1/2 cup Swerve Brown
  • 3/4 cup heavy whipping cream
  • 1/2 tsp  pure vanilla extract
  • 1/4 tsp salt

How to make Keto Somao Bars

Almond Flour Crust:

Start by preheating the oven to 325F. Once done, take and whisk together the almond flour, stevia sweetener, and salt. Next, melt the butter and add it into flour mixture until the mixture is well incorporated and crumbly.

Once it’s crumbly, you’re going to flatten out the mixture into an 8×8 baking pan. Make certain that you press firmly into the bottom. If you want to, you can also add a layer of parchment paper into the bottom so it makes it easier to pull the bars out.  

Then go ahead and put into the oven to bake for 15 to 18 minutes, until just golden brown. After that timeframe, remove and let cool.  While the crust is cooling, you’ll want to start to prepare your filling. 

Chocolate Filling/Drizzle:

Grab a microwave-safe bowl and melt the chocolate and coconut oil together. Stirring in between 30-second increments until melted and smooth. 

After it’s smooth, take and use about 2/3 of the chocolate mixture and spread it evenly over the completely cooled almond crust. 

Coconut/ Carmel  Filling:

It’s time to make the filling. Using a small skillet, spread the coconut over medium heat. Stir frequently until toasted and light golden brown. Once done, set aside. 

Next, you’re going to take a large saucepan and combine the butter and sweeteners to cook over medium heat. Cook until melted and then bring to a boil. This will take about 3 to 5 minutes. 

Once done, remove from heat and add the vanilla, cream, and salt. If you notice the mixture will be bubbly but that is normal. 

Next, you’re going to slowly stir in the toasted coconut.

 Once it’s all mixed, take and spread the mixture over the chocolate-covered crust. Let it all cool for about 1 hour and then cut it into squares.

Take the remaining chocolate mixture and reheat to drizzle over the bars.
