Yummy Christmas Tree Cupcakes

I’m a big fan of decorating cupcakes. There’s just something about that quality time with the family at home that I just really love. And even more than that, it’s just really fun and therapeutic.

But when the holiday season arrives, it’s like a “must” to start decorating anything and everything cupcakes and cookies. I literally can’t get enough of it and it’s pretty safe to say that my family is totally fine with that, too.

We all have a huge sweet tooth which is why we gear up for the holiday season and are super excited once it arrives.

You’re going to have a lot of fun decorating these Christmas Cupcakes as well. They’re too cute not to put a smile on your face!

How hard is it to make these Christmas tree cupcakes with ice cream cone?

That’s a great part about them; it’s not hard at all to make these. While people may look at them and wonder how you get all that icing piled on so high, you know the secret and don’t have to share! (you can if you want, but you don’t have to!)

Using the ice cream come to help make the tree is such a neat trick that makes this Christmas cupcake so fun!

What happens if my frosting is too runny?

More than likely, you just added in a little bit too much cream. Don’t fret, it happens to the best of us.

If it’s not as thick as it needs to be, just add in a little bit more powdered sugar and mix. I recommend doing it in small amounts at a time otherwise you might add too much and make it too thick. (and then you’d have to balance it out with more cream and it just could be a never-ending cycle at that point)

Does green food coloring stain?

You bet it does! Once you have it mixed in with the homemade frosting, it lessens its brightness and potential for staining, but when you’re adding in those liquid green drops, be careful! It will turn anything in its path green – hands, countertops…you name it.

Recipe to make these Christmas Cupcakes

The first thing that you’re going to do is make the cupcakes. Add your butter, sugar, eggs, oil, vanilla, vinegar and buttermilk, and blend until smooth and creamy.

Next, in another bowl, blend together the cake flour, cocoa powder, baking soda, and salt. Then, add in your flour mixture little by little, blending between each addition until it’s all been mixed together.

Make certain that you’re scraping down the sides of the bowl and getting all that into the mixture as well.

Once done, add in your red food coloring and mix.

Line your cupcake or muffin tin with cupcake liners and fill them 3/4 full of batter.

Place your cupcakes in the oven and bake at 350 degrees for about 15-18 minutes.

Once they’re done baking, remove them and put them on a wire rack to cool.

As the cupcakes are cooling, it’s time to make the frosting.

Grab a mixing bowl and add in your softened butter and blend until it’s smooth.

Then, add in 1 Tablespoon of cream, the vanilla, and mix those until they are well-mixed and creamy.

Next, add in the powdered sugar but do so one cup at a time. You’ll want to alternate with a few drops of cream every once in a while so it keeps it moist.

Blend until creamy.

Take half of the frosting and put in a bowl and add in your green food coloring at that point. Take both bowls of frosting and put in the fridge to chill until the cupcakes are completely cooled down.

Whisk from stand mixer in silver bowl of green icing

Once the cupcakes are cooled, take out the white frosting from the fridge and frost the tops of the cupcakes using a spatula. This is supposed to just resemble snow so it doesn’t need to look perfect. (you can even add on some fun sprinkles as well!)

Once all the cupcakes have been topped with white frosting, set them aside and frost the sugar cones with the green frosting.

Use a spatula and just spear it all over the cones from top to bottom then stick the cone on top of one of the cupcakes. Repeat for all.

With the green frosting that you have left, put it in a pastry bag and use your #30 star tip and pipe little starts all over the sugar cones.

Once done, you can then sprinkle powdered sugar over all the cupcakes and tree cones to look like even more snow.

Allow the frosting to set up and enjoy it! Make certain that you’re not serving right away, you’re storing in the fridge.

NOTE:  You can also place Christmas Candies in the cones before you place them on the cupcakes for an extra surprise.
