Anytime that I’m craving comfort food, my mind can’t help but lead me straight to this recipe. I love the sweet flavor from the corn paired up with the crunchy texture from frying them up in the pan.

If you’ve ever had leftover potato cakes, the texture very much reminds me of those. (and if you haven’t, we need to chat!)

While this dish is more of an appetizer to enjoy before a meal, it’s an easy addition to have as a side dish, too. You can even use leftover corn from the night before to whip up these tasty treats!

So many people steer clear of making corn fritters because they think that it’s a hard process. This recipe is going to show you that it’s absolutely not the case!

And the good news about this fritter recipe is that you can vary it up a bit to make them just how you like them. They can be sweeter, spicier, or anything in between.

Why are my corn fritters soggy?

If after cooking up your corn fritters you find to be a bit soggy, there are probably a couple of reasons why. You may not have your pan hot enough to get the sear on them that you need to or you may not have enough butter or oil in the pan to crisp them up.

Both are a simple solution and fix that you can easily alter for the next batch.

Are corn fritters and hushpuppies the same?

They’re not. Hushpuppies have less texture to them and are made using different ingredients. You’ll also find them in more of a “ball” shape while fritters are flattened out and thinner.

Ingredients needed for Corn Fritters

The simple list of ingredients you need are below!

  • 1 can corn
  • 2 eggs
  • 1 or 2 teaspoons sugar (optional)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¾ cup shredded cheddar cheese (or any flavor of cheese)
  • 2 tablespoons butter
  • 2 tablespoons olive or vegetable oil
  • ¼ cup cooked and crumbled bacon
  • 1 diced jalapeno
  • Chives for garnish
  • Dipping sauce of your choice

How To Make Corn Fritters

Grab a bowl and mix together the eggs, salt, pepper, sugar, and baking powder. Mix until combined well.

Once mixed, add in the flour and whisk well.

Next, put in the corn, cheese, bacon, and diced jalapeno. 

After that, put the oil and butter in a skillet and heat on medium-high heat. 

When the pan is hot, put in spoonfuls of the mixture using a spoon. Use the back of the spoon and flatten them out. These might break up while you’re doing this and that is okay.

Fry until one side has browned and then flip.

Remove once both sides are browned and put on paper towel/paper plate to drain off the oil.

Serve with your favorite dipping sauce.

Variations to these Corn Fritters

You can make these less sweet by omitting the sugar.

If you want more heat, add in more jalapeños.

Buy flavored corn at the store to give them some extra flavor and coloring.

Change out the types of cheeses and try Pepper Jack, Mozzarella, or even provolone.

I’ve found the when I shred my own cheese, I like the flavor a bit more. But you could always used bagged pre-shredded cheese if you want. 

Garnish with chives, green onions, cheese, sour cream, bacon, or anything else that you’d like.

Don’t forget the dipping sauce for these corn fritters. You can use anything that you want but I love dipping them in ranch, sour cream, and even a little bit of salsa.

Notes/Tips/Variations

  • You can easily omit the sugar if you want. We like ours to be slightly sweetened.
  • Add more jalapeno if you want them spicier.
  • You could use fiesta-style corn instead of regular if you want some extra flavor and color.  
  • Try out a variety of cheeses like Pepper Jack, Mozzarella, or even provolone.
  • I prefer to shred my own cheese because we love the flavor, but you could always used bagged pre-shredded cheese if you want.
  • Garnish with chives, green onions, cheese, sour cream, bacon, or dipping sauces.
