When you have family in town or need to feed a crowd this baked french toast casserole is perfect! You’ll be the favorite overnight host whether you want to or not.

French Toast Bake
Now, we won’t claim that this is going to be the healthiest breakfast recipe but it is delicious! Using brioche bread in this casserole gives it that extra something that makes it better than the rest.
If you have never tried a brioche loaf, you are in for a serious treat. Brioche is a french bread that is made using eggs and butter which makes it super soft and subtly sweet.

Who Invented French Toast?
The story behind french toast is actually rather interesting. For starters, it wasn’t invented in France. The first version, which wasn’t yet known as French toast, is thought to have been traced to the Roman Empire.
It was against religious beliefs to throw away bread, due to it being viewed as the body of christ. Because of this, they found alternative uses for it, such as french toast!

How to Make French Toast Bake
The best part of this recipe, in my opinion, is that it’s fool proof. Anyone can make this, regardless of their experience or expertise in the kitchen!
Bringing the kids in the kitchen to help tear up bread and beat eggs is a great learning moment! Cooking is a fantastic skill to develop young and this french toast bake recipe is the perfect starter recipe.

Brioche French Toast Casserole
I am willing to bet you have most, if not all, of these ingredients already on hand. I always have everything listed except Brioche bread and sometimes we are out of chocolate chips!
As for the brioche, if you have an aldi near you, they sell amazing chocolate chip brioche loafs! You can, of course, get it at most any grocery store. I just happen to love the brioche from our local aldi store because it’s delicious and well-priced!
Ingredients

For this recipe, you’ll need to gather the following:
- 1 loaf chocolate chip brioche bread, cut or torn into quarters
- 6 eggs
- 2 cups of milk (I use 2%)
- 1 1/2 tbsp vanilla extract
- 2 tbsp sugar
- 2 tsp cinnamon
- 1/4 cup chocolate chips

Recipe
Like I stated, this is simple and foolproof! First, you want to grease your 9×13 baking dish. This step is crazy important, as you definitely don’t want this tasty stuff stuck to the pan!
Next, you will place your bread in a single layer in your baking pan and set aside.

Next, place your eggs, milk, and vanilla extract in a medium bowl. Whisk this well to beat your eggs and combine all ingredients.

Once combined, set aside. Grab a small bowl and combine your cinnamon and sugar well.
Then you will pour half of your egg mixture onto the bread, covering it as well as possible. Take your cinnamon sugar mixture and sprinkle half of that over the top of the bread as well.

Add in the remaining bread on top of your first layer. Repeat the same steps, using the rest of your egg mixture. Then, sprinkle your remaining cinnamon and sugar mixture to cover your second layer.
You will then want to refrigerate your casserole for 30 minutes, at minimum but even overnight is great. Allowing time for the bread to soak up the flavors makes for an extra delicious casserole!
When ready to bake, preheat your oven to 350 degrees. Cover casserole dish with aluminum foil and bake for 30 minutes. Remove from the oven, remove foil, and sprinkle chocolate chips throughout.

Return to the oven, uncovered, for an additional 15 minutes. Carefully remove your french toast bake from the oven and enjoy!

Chocolate Chip French Toast Bake
This French Toast Bake with Chocolate chips is the perfect easy breakfast to feed a crowd or just the family!
Ingredients
- 1 loaf chocolate chip brioche bread
- 6 eggs
- 2 cups milk
- 1 1/2 tbsp vanilla extract
- 2 tbsp sugar
- 2 tsp cinnamon
- 1/4 cup chocolate chips
Instructions
- Grease a 9x13 baking dish and place half the bread in a single layer along the bottom of the dish. Set aside.
- Place eggs, milk, and vanilla extract in a medium bowl. Whisk to combine.
- In a small bowl, combine cinnamon and sugar.
- Pour half the egg mixture over the top of the bread and top with half of the cinnamon and sugar mixture.
- Place the remaining bread on top of the coated bread layer and top with the remaining egg mixture and remaining cinnamon and sugar.
- Place the casserole in the refrigerator for at least 30 minutes (overnight is acceptable too).
- When ready to bake, preheat oven to 350 degrees. Cover casserole dish with aluminum foil and bake for 30 minutes.
- Remove foil and add chocolate chips throughout your dish. Bake uncovered for an additional 15 minutes.
