These Grasshopper Bars are crazy good. The layers of taste and flavor that you’re going to get with one bite will have you coming back for more over and over again. I personally think that these taste like homemade Mint Brownies which just so happen to be two of my favorite things!

Delicious Grasshopper Bars
What really sets this easy Grasshopper Brownie dessert apart for me is the fact that it’s creamy and also melts in my mouth at the same time. I love the chewy texture of a brownie but also love the mint flavoring as well.
I can’t tell you how many times I’ve made this simple mint recipe but one thing is for certain…there’s never even a crumb leftover so I know that they’re so good!
While you can totally take this and share it with your family and friends, you really don’t have to, either. There’s nothing wrong with baking it up and enjoying for yourself all weekend long!

Can I make my own homemade brownie mixture for this recipe?
Of course! Using a premade brownie mix is all about saving time on my end but if you have an awesome homemade brownie mix that you love, you can absolutely use that instead.
When it comes to making a dessert recipe your own, homemade options are always good. Premade mixes are great for convenience and time but homemade mixes are great for that love and warmth in baking, too.
How did brownies get their name?
It’s thought that brownies got their name because of their coloring being brown so it just makes sense that these awesome brownies are called Grasshopper Brownies since they’re green like the color grass. (but taste nothing like grass at all!)
How do you store leftover Grasshopper Bars?
The best way to store leftover brownies is to have them in a container with a lid. Due to the ingredients of these brownies, you need to also store these brownies in the fridge.
If you decide that you want to try and freeze these brownies, you can do that as well and the same rules typically apply. Just add them to a freezer-safe container with a lid and put them in the freezer.
The simple trick that I like to do is that I like to freeze my treats individually or in pairs so that way when I’m craving something delicious, I don’t have to unthaw the entire batch just to be able to enjoy one or two.
Do brownies harden as they cool?
They do so keep that in mind when you’re making these delicious brownies. They’re going to continue to firm up after they’ve been removed from the oven.
In saying this, it’s important to make certain that you check that they’re completely done baking before you pull them out of the oven so verify by using the “toothpick” method. (Stick a toothpick into the center of the brownie and if it comes out clean, they’re done and ready to be pulled.)

How to make Grasshopper Bars
Just gather up the list of simple ingredients to get started:
- Brownie mix ( use a family size that fits a 13×9 inch pan)
- Ingredients to make brownies according to what is needed on the package
- ½ Cup Butter, softened
- ½ Cup Cream Cheese, softened
- 2 ½ Cups Powdered Sugar
- 2 teaspoon Vanilla Extract
- 1 teaspoon Peppermint Extract
- Green food coloring
- ¼ Cup of Mini Chocolate Chips

How to make Mint Brownies
Start by baking brownies according to the package directions and then allow them to cool completely.

Next, you’re going to want to take an electric mixer and blend together the cream cheese and butter.

Once those ingredients are blended together well, you’re going to add the powdered sugar a little at a time, beating between additions until it’s well mixed and ready.
After that, take and add in the vanilla and peppermint extracts. Mix those additions.
Once mixed, you’re going to add green food coloring. Do this a few drops at a time until you get that green minty color as the pictures show. (This is usually about 8 drops)

Take and spread the frosting in a thick layer on the cooled brownies.

Grab your mini chocolate chips and sprinkle them all across the top.
Take your completed brownies and cut into 24 square pieces & enjoy!
