Hearty Cajun Creamy Chicken Pasta

I’ve been a fan of pasta since I can remember. Maybe it started out at a young age for my love of macaroni, but now that I’ve developed my taste buds a bit more as I’ve aged, the only pasta recipe that I crave is this creamy cajun pasta with chicken.

I love the texture of the noodles, the extra taste of the chicken and the added spices to really give it that southern kick. It’s one of those dishes that make my mouth water just thinking about it and it’s never disappointed in all the times that I’ve made it.

While there are a lot of cajun pasta recipes out there, this one just tops the list for me!

How spicy is this Cajun Creamy Chicken Pasta recipe?

Well, it’s a bit spicy but it’s not overly spicy. Just know that if you want to reduce a bit of the spice, you totally can. That’s the great part about this recipe. You can alter it to your taste buds and whatever you need.

How do you know when pasta is done cooking?

I always follow the timed directions on the package since it can be hard to tell. It’s the easiest way to cook the pasta without the worry of actually overcooking it.

You’ll notice for this recipe that I shorten the time a bit of the cooking of the noodles but that is because I like the noodles to be a little “tougher” for the texture of this chicken recipe!

You can cook your noodles for as long as you want but I wanted them to stay in once piece and not rip apart when mixed so this is why I cook them this way.

How to make Cajun Creamy Chicken Pasta

This is one of these creamy chicken ideas that is a surefire winner!

Cajun Cream Sauce:

  • 1 teaspoon Red Pepper Flakes
  • 1 teaspoon Cajun Seasoning
  • 1/2 teaspoon Kosher Salt
  • 1/4 teaspoon Ground Black Pepper
  • 2 Cups Heavy Cream
  • 1 Cup Chicken Stock
  • 1 tablespoon Cornstarch
  • 1 Cup Parmesan Cheese, shredded

Crispy Parmesan Chicken:

  • 4 Chicken Breasts, butterflied
  • 1/4 Cup Flour
  • 1 Cup Breadcrumbs
  • 1/2 Cup Parmesan Cheese, grated
  • 1/2 teaspoon Kosher Salt
  • 1/4 teaspoon Ground Black Pepper
  • 2 Eggs
  • 4 tablespoon Vegetable Oil

Pasta:

  • 1 lb Farfalle Pasta
  • 2 tablespoon butter
  • 1/2 Yellow Bell Pepper, sliced
  • 1/2 Red Bell Pepper, sliced
  • 1/2 Red Onion, sliced
  • 8 ounces Cremini Mushrooms, sliced
  • 1 tablespoon Minced Garlic
  • 1/4 Cup Parsley for garnish (optional)

How to make Lousiana Pasta

To begin, take and mix the sauce ingredients together and set aside.

Next, grab and add water to a large pot to boil and cook the pasta to a minute shy of what is listed on the box.

Drain the pasta but do not rinse it off.

Next, you’re going to mix the flour, breadcrumbs, Parmesan cheese, Kosher salt, and black pepper together in one bowl.

Grab a second bowl and whisk the eggs.

Now it’s time to coat the chicken. Take and dredge each piece of chicken into the breadcrumb mixture. Once you do that it’s time to then dip into the eggs, and finally back into the breadcrumb mixture.

Let the chicken sit on a tray while you cook your vegetables.

Next, take and melt butter in cast iron skillet over medium heat. Once it’s melted, you’re going to add the bell peppers, onion, garlic, and mushrooms.

Cook these veggies for 3-5 minutes until just starting to brown but aren’t getting soft or breaking down.

Take the vegetables out of the pan.

Now it’s time to cook the chicken. Add the 1/4 cup oil and cook the chicken until crispy and golden brown, which is about 3-5 minutes on each side.

Once cooked all the way, remove the chicken from the pan and drain the oil.

Add the pasta and vegetables into the pan with the sauce mixture.

Allow it to thicken and stir it for 3-5 minutes.

While the sauce is cooking slice up the chicken and get it ready to serve.

Serve the pasta with the sliced chicken on top and also add on extra Parmesan if requested.
