I love making zucchini muffins because it’s a super simple way to get a few more veggies snuck into the bellies of the kids. They’ll have no idea that they’re eating anything healthy and you’ll be proud of your mom move to make it happen.
Plus, this simple Chocolate Zucchini Bread recipe is a great way to use up that leftover zucchini that you might have from your garden or from the store. I tend to buy too many veggies at times and instead of wasting them, I know that this bread recipe is always my back up!

Do you squeeze water out of zucchini for Muffins?
Yes, absolutely. You’re going to be amazed at how much water the zucchini is actually holding! In fact, it might really be quite a shock! (you can even use this as a fun learning lesson for the kids!)
Once you grate the zucchini for this bread recipe, you can squeeze it out and to get rid of the excess or simply let it set and watch it naturally come out after a few minutes of time as well.
Why did my muffin fall in the middle?
There is a chance that the chocolate zucchini muffins are going to “fall” in the middle. This doesn’t mean that you’ve done anything wrong. Sometimes, there are air bubbles that get trapped inside the batter when baking.
As the muffins get baked, the bubble expands. But as the muffins start to cool, the air bubble deflates and will cause the sinking in the middle. It happens but it doesn’t affect the taste or flavor.

How To Make Chocolate Zucchini Muffins
Get ready to love the ease of this simple recipe! It’s going to be come a favorite for sure!
Ingredients needed for healthy chocolate muffins
- 1 ½ cups old fashioned oats or quick-cooking oats
- 1 cup all-purpose flour
- ¼ cup unsweetened cocoa powder
- 1 ½ teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 2 cups shredded zucchini
- ¾ cup Greek yogurt – vanilla or plain
- 1 ripe banana
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons of honey
- 2 eggs
- ½ cup of chocolate chips
How To Make Double Chocolate Zucchini Muffins
Start by preheating the oven to 375 degrees. Take and put 12 cupcake liners inside your muffin tin and set aside.
Put 1 1/2 cups of your oats to the blender and blend until the texture is a super fine flour powder. Take out of the blender and put it into a mixing bowl.
Once you have the mixture in the bowl, add in the other dry ingredients and set aside as well.
Using your blender again, add in the wet ingredients and blend until mixed and smooth.
Once that is done, add in the vanilla, sugar, and eggs. Blend on low speed until it’s combined well.
Put your dry ingredients and add to the wet and blend well.
After everything is all mixed together, put them back into your mixing bowl, and add in the chocolate chips. Stir them in by hand.
Take and pour the batter that is mixed into the cupcake liner and fill them about ¾ full.
Pop in the oven for 20-25 minutes. The tops are going to need to be set before pulling them from the oven. You can also check by inserting a toothpick into the middle and making certain it comes out clean to show the muffins are done.

To keep these muffins as fresh and moist as possible, you’re going to want to store them in an airtight container. I like to keep mine in the fridge and then I pop them in the microwave for a short time to give them a little warmth when I’m ready to eat them.
I also like to enjoy these simple muffins with a nice cup of hot coffee in the morning as well. They’re literally one of my favorite ways to start my day! And if you want to take them up a notch, you can even top with a little bit of powdered sugar, too!
